Rosemary Chicken Bites

I made this last week and it was really good. Even Mikey liked it. It is a Pampered Chef recipe that I tweaked. I like this recipe because it is easy, quick, flexible and has a lot of flavor.

Rosemary Chicken Bites

2 boneless skinless chicken breasts cut into 1-inch pieces (F:5, P:91)
1 Tablespoon of olive oil (F:13.5)
1/4 teaspoon of garlic (n/a)
2 Tablespoons of Rosemary blend seasoning ( I use Sylvia’s “Queen of Soul Food” secret blend. It’s salt free!) (n/a)

Cut the chicken into 1-inch pieces. Remove all visible fat.

Combine oil, garlic, seasoning and chicken in a ziploc bag and kneed for two minutes straight.

Heat skillet over medium heat until drop of water sizzles; add chicken and cook 10-12 minutes or until chicken is golden brown and no longer pink in center.

Transfer to a plate and serve.

Side dish:

Add a medium sized (115 grams) baked sweet potato and 1/2 a cup of fresh pineapple to bump up your carbs.

Pineapple: Calories 41, Total Fat 0 g, Carbohydrate 11 g, Protein 0 g

Total meal: F: 6, C: 35, P: 32

This makes a well-rounded 4-block meal. The protein is one block over, but you can feed that to your dog…
